My most memorable meal was Kakoda, a traditional local Fijian dish, from Nadina Restaurant. This dish was the epitome of clean, fresh, local flavours. It was refreshing, seasoned to perfection and exuding an abundance of flavours. I could taste each ingredient in every mouthful, yet it was such a cohesive and harmonious dish. I will be trying to recreate this dish for the rest of my life!
